Apple Fritters

Good morning! It's a chilly, rainy day in October. We acquired some beautiful apples from a local orchard. Actually, a lot of apples. Already canned 34 quarts of applesauce, made cinnamon fried apples, and apple crisp, not to mention what has just been eaten. So today I got a hair-brained idea. "Let try apple fritters!" So without further ado and rambling on, I will get to the point......The recipe!
First and foremost, make sure you have all your equipment ready, cause once the batter is done and it goes in the fryer things will go quickly and you dont want to burn them trying to get stuff together.
What you will need:
2 cookie sheets....1 with paper towels and 1 with wax paper
metal slotted spoon
mixer
measuring spoons and cups
bowls
whisk
Preheat fryer to 375 degrees. Prep your cookie sheets.
2Tbsp sugar
2 eggs
1 c flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1/4 c milk
2 tsp lemon juice
2-3 c peeled chopped apples
Glaze - 1 1/4 c confectioners sugar, 1/4 tsp vanilla 3-4 tsp warm water (mix until slightly thinned)
Beat sugar and butter 1-2 minutes, add all ingredients mix. Add apples. If too thin like mine was add more flour until you get a good thick consiste
ncy that it stays together when you drop a dollop.
Make your glaze.
Drop large spoonfuls in oil. Brown to golden color, flip. Drain on your prepared sheet with paper towels. Cool a minute, while still warm dip in glaze. I used a metal cooling rack to set mine on after dipping so the excess could drip right back into the bowl (yes it was a little messy and got on your hands). Main thing....ENJOY!!!!!
